Here is a great recipe for Chicken from Faith Zaki …ENJOY!
Marinade the chicken for at least 30 minutes or overnight…
2 parts fresh lemon juice (1.5 lemons) to 1 part olive oil
tsp. of oregano
tsp. of rosemary
about 2-3 cloves of garlic, pressed/finely chopped
This much marinade is enough for about 2 servings of chicken. Just multiply as you add more chicken.
Dice the chicken breast or thigh meat or cut it into thin cutlets. Cook in a wok or frying pan until the chicken is cooked right through.
Serve the chicken with a yogurt and mix in chopped cucumber and a bit of finely chopped mint and a pinch of cumin. Also couscous with fresh peas and chopped green onion.
